Pine Street Cellar Series: Lavender
Lavender is known to have many qualities ranging from perfume to medicinal oils. It also happens to grow well in our great state, so why not add it into our ciders! Pine Street Cellar Series: Smooth Operator
A cider truly named after it's smooth profile. This cider is fermented with an ale yeast, chosen for the namesake of our home town. The yeast adds a soft mouth feel to the cider while maintaining the bright notes from the fresh apples. This limited cider is only available at our Tasting Room for a short time. Apples and flowers, a common combination in nature, so why not in cider? The delicate flavor of the dried chamomile flowers complements our fresh apple cider blend. Lightly sweetened with honey from Champlain Valley Apiaries makes this cider profile light, refreshing and balanced. This limited cider is only available at our Tasting Room for a short time. Apple trees and tart cherry trees make good companions in the orchard. They bloom and harvest at different times throughout the growing season, which is good for the land and good for the farmer. We figured they might make nice companions in a fermented cider as well. It turned out to be true, which is good for us, and good for you. We gave Stan the task of making us the finest blend of cider possible from the fruit at his orchard. Made with heirloom blends, this year we did something a little different with Stan Up and used only 2015 apples giving this year’s cider a vintage. We aged the cider in our steel tanks for 10 months starting last November, bottled it in late August and then let it bottle condition for another 2 months. And Voila! Our tasting room is available for private parties and events (on Sundays only).
